I’ve seen a few of those “herbarium” seed kits around, and honestly, results seem hit or miss. Mystery seeds can be fun, but quality control isn’t always great. Sometimes you get viable seeds, sometimes it’s a dud. If you go ahead, make sure you keep the jar in a warm, bright spot (but not in direct sunlight that could cook the seedlings), and avoid overwatering-closed jars can trap moisture and lead to mold fast.
That said, if you really want to grow herbs reliably, I’d just grab a pack of seeds from a reputable supplier and use regular pots. Kits are cute, but not always practical for long-term plant health. Still, let us know if yours works out-sometimes you get lucky!
